Gramma Hoole’s Slumgullion

This is the ultimate comfort food and relatively easy to make. This is a bit different from the other Slumgullion recipes online.

Implements

  • Large frying pan or dutch oven
  • Sharp knife
  • Can opener
  • Measuring cups
  • Something to cook the starch you choose:
    • (For noodles) a pot to cook a standard size package of noodles
    • (For rice) a rice cooker or a pot to cook rice

Ingredients

This is a recipe for 4 people.

Step 1: Pick a Starch

  • 1 package of egg noodles or macaroni (I cook them separately in a pot with 1 TB salt)
  • a net of baby potatoes (or fingerling potatoes) from the grocery store. (I’m not sure how much is in a net, maybe 1 pound?) If you are using potatoes, makes sure to quarter each potato, and I cook those in the pot together with the Slumgullion.
  • 1 cup white rice
  • 1 can of black-eyed peas

Step 2: Get your ingredients together

  • 3 or 4 slices of bacon, cut into matchsticks
  • 1 lb. lean ground beef
  • 1/2 medium onion, diced finely
  • 3 cloves garlic, chopped
  • 2 TB flour
  • 2 carrots, chopped or diced
  • 1 can Campbell’s Beef with Barley soup
  • 1 cup water
  • Salt and pepper and whatever other seasoning you want to add
  • Chopped green onions (on top, as flavoring/garnish)
  • (Optional) Any leftovers or other veggies you have laying around
  • (Optional) I sometimes add 1 can of corn or green beans and some people add 1 can of chopped tomatoes
  • (Optional) Shredded cheddar cheese on top of each serving

Instructions

  1. (Skip this step if you aren’t using noodles.) If using noodles as the starch, bring water with 1 TB salt to a boil while you’re preparing the rest of the steps.
  2. Salt and pepper the ground beef.
  3. In a large frying pan or dutch oven, cook the bacon pieces for a minute or two over medium heat, so the bacon fat renders a bit.
  4. Add the beef, chopped onion, and garlic to the bacon fat and cook over medium heat until the meat is browned.
  5. When the beef is done, sprinkle the flour over the mixture and cook/stir for about one minute until it gets heated and well blended in.
  6. Add in the carrots, Campbell’s Beef with Barley Soup, and water. If you are cooking with potatoes or black-eyed peas, throw them in too.
  7. Also add in leftovers or additional veggies at this point. This is when you’d also add in any seasonings you might want to add. (I sometimes add a little bit of this steak seasoning mixture I have, just to give it a kick. Hot sauce is also a nice option, if you like that.)
  8. Cover the pot and let it everything simmer together for 15-20 minutes.
  9. (If making noodles) Now’s the time cook the noodles. Don’t overcook. (If it gives you a range–say, “cook 8-10 minutes”–I usually cook only to the lower number, so that it is al dente and still has firmness to it.)
  10. (If making noodles) When the pasta is done, turn the heat off of the Slumgullion, mix the noodles into the Slumgullion.
  11. (If making rice) Skip the last two steps and just cook rice separately in a rice cooker, instant pot, or simply boil in a pot on the stove, then mix the rice in when it’s done.
  12. Serve hot with chopped green onions over the top. (And, optionally, cheese!)
